Botanical Name: Pimenta dioica

Parts Used: Berry Traditionally used for:

•Seasoning

A sweet flavor reminiscent of cloves, cinnamon and a hint of nutmeg. Allspice is a single berry from the Jamaican bayberry tree. The whole berry can be used in poached fish stock, vegetable and fruit pickles. Can be ground for use in cakes, puddings, cookies, gravies, bbq sauce and any other food you desire. It is often used in German sausages and is so common in English baking that it's sometimes known as English Spice.

Many chefs prefer whole allspice because of the more intense flavor and aroma you get by crushing or grinding it just prior to use.
