Botanical Name: Pimenta dioica

Parts Used: Berry Traditionally used for:

•Seasoning A sweet flavor reminiscent of cloves, cinnamon and a hint of nutmeg. Allspice is a single berry from the Jamaican bayberry tree. The whole berry can be used in poached fish stock, vegetable and fruit pickles. Or you can ground it and use it in cakes, puddings, cookies, gravies, bbq sauce and any other cooking you wish. It is often used in German sausages and is so common in English baking that it's sometimes known as English Spice.

• As you might suspect from its name, allspice has a sweet taste that’s reminiscent of a number of different spices, including cloves, cinnamon and nutmeg. Because of its sweetness, it’s commonly used in baked goods like spice cakes, dessert breads and cookies. It’s also the primary flavor in Jamaican jerk seasoning.
